Tonight Texas executed a murderer at about 6pm Central time. At 12:01am Central Time, Missouri will execute a guy. So from the perspective of people in the Pacific and Mountain time zones, there will be 2 executions today. From the perspective of people in the Central and Eastern time zones, there would be an execution on the 19th and another on the 20th. When it comes to determining whether we have a double header, do you always go by the date of the state in question, or can people in California (for example) claim that there was a double header whereas us folks in the Midwest cannot?

I suppose the answer depends on how well the average poster understand the theory of relativity and the warpage that occurs in the space-time continuum.

Depends Agaveman. If I was hammered tonight, I'd be celebrating a doubleheader. I'm not, so I guess it two dates for me.

This is a very good question. You would almost have to use local time and date. At 12:01 local, it is May 20 not May 19, which would be the date listed on the warrent and the offical date of execution. As they fall on different dates, you do not have a double header.
